Sauté mushrooms and kale, add half jar of pasta sauce and dinner is ready!
Pour it over anything, I had brown rice or I’d make pasta.

Sunday Full of Food
Rare day spent at home. Too busy with work and photography projects. So glad to just hang around my apartment, backing up files, listen to neighbors kids playing in the pool and cook.
1.Breakfast of salad with a lot of herbs and garbanzo beans. Whole wheat English muffin.
2. Lunch of young potatoes bought at farmers market, boiled and fried with fresh dill, parsley and cilantro. Green beans and mushrooms glazed with balsamic vinegar reduction and soy sauce and tomatoes.
3. Baking project – traditional Philippine rice cake bibingka vegan style with nuts and coconut butter.
Baked on banana leaves.
4. Snack/dinner – vanilla coconut milk yogurt with granola and strawberries.
Dinner with Dandelion
We all know dandelion. The wonderful and extremely resistant weed that blooms one of the first after winter.
and the one which roundup is killing in big numbers.
Today I bought a bunch of organically! grown dandelion leaves.
And I cooked them with broccolini and beet greens using coconut oil.
yes, I know it sounds strange but I knew dandelion will be bitter and wanted to sweeten it up.
Here is my dinner of tomato – carrot pasta, beans with garlic and onion and my sautéed greens.
I didn’t really like it but ate it all.
Dessert of fresh berries, they are getting more affordable now!

Portobello and Quinoa
Early dinner tonight.
I pan fried slices of portobello mushroom with a little oil and water and sprinkle of pink salt.
On separate skillet I sautéed onions, chopped portobello and purple kale.
then I combined it all together with rainbow quinoa.
Crispiness of kale was a nice touch to a meaty mushroom.

Woke up hungry after paddleboarding yesterday on lake Sammamish.
it was very hot for my wetsuit, but sun felt so good!
so today I’m sore.
Good thing I had some leftover stuffing for cabbage rolls and pasta, warmed it up plus some color of tomato and avocado. and coffee of course.

In Russian they called голубцы, what means birdie. I added some frozen porcini mushrooms too.
Some of the students at school brought three found bunnies. oh so cute!
they are incredibly fast and wiggly.
Senior portrait photoshoot in Snoqialmie and Fall City made me hungry again. I stopped at Chipotle, but Issaquah population created a huge line of 20 something people so I went home and whipped up some stir fry with tofu, bokchoy, zucchini and peanut butter
and it was another warm day in Seattle area.
